Colorful Tutti Frutti

We all mostly enjoy the red flesh watery nutrient-rich portion of watermelon, however, its outer white rind goes waste. Just like watermelon, the rind/white portion too has numerous health benefits. It has high amounts of amino acids, vitamins A, B6 and C, minerals like zinc and potassium.

The citrulline present in it has antioxidant properties and helps to boost the immune system. So, here a recipe of making colorful Tutti Frutti using the outer white rind portion of watermelon. The colored candied cubed fruits can be used in decoration of cakes, ice creams, custards and fruit creams. You can also make tutti frutti cookies too.


1. White portion of watermelon (raw papaya or raw pumpkin) - 500 g

2. Water

3. Sugar - 3 cups

4. Food colour, red, green, yellow - 5 drops each

Method of Preparation

1. Take a watermelon and peel the skin of it. Separate out the white portion of it and cut it into small cubes.

2. Open boil the cubes in water till they become translucent or semi-transparent

3 Drain off the water and keep the cubes aside.

4. Take 3 pans and add 1 cup sugar and 1 cup water to make sugar syrup in each.

5. Add 5 drops of red, yellow and green food colour into each vessel and mix well. 6. Divide semi-cooked cubes into three equal portions and put into each vessel.

7. Boil for 20 minutes with stirring in between.

8. Keep the cubes in colored boiled sugar syrup for 12 hours or overnight to ensure that cubes absorbs all the colour.

9. Next morning, drain off the sugar syrup and allow the cubes to dry over aluminium foil or plate in sunlight (most important step).

10. Once the the cubes dry off completely, they will not be sticky with each other.

11. Mix them together. The tutti frutti is ready for usage. Store it in an air tight container for later use.
