Gajjar ka halwa, carrot halwa recipe

The popular North-Indian sweet during winters, Gajar ka Halwa or Carrot Halwa, is one of the most loved desserts. A nutrient rich and awesome taste, it is relished by both kids and adults.
Ingredients:
Thick red juicy carrots- 2 Kg (Grated)
Ghee- for frying dryfruits
Dryfruits (cashews and almonds)- 1 cup (chopped)
Khoya- 1 cup
Sugar- 1 cup or as per taste
Milk (full cream cows / buffalo milk)- 1 l
Cardamom powder- 1 tbsp
Method of Preparation:
Step 1: Preparation of Khoya
Heat milk and boil it in wide kadai. Once a layer of cream is formed over the milk and sticks to sides of vessel. Take off this layer and repeat the process for atleast 5 times or till milk reduces to one-third. Add cardamom powder. Give a good mix. Keep scraping off the collected cream from sides. It can be stored in refrigerator for a week.Step 2: Peeling and grating of carrots
First rinse, peel the skin off and grate the tender juicy carrots. You can do manually or using food processor.
Step 2: Saute the carrots
In a heavy bottom kadai (Non-stick or any other), add grated carrots. Saute well until the color changes and all the water of carrots is evaporated. Add 1 cup of sugar or more depending upon taste. Stir well until the melted/dissolved sugar is completely absorbed.
Step 3: Final mixing
Add 1 cup of grated khoya (Mawa) and mix it well for 5 - 10 minutes. Add already fried or raw dryfruits (cashews, almonds) to it and mix well.Enjoy the delicious mouth watering carrot halwa, either cold or hot.
