The Quick & Easy Recipe Of Mexican Beans And Aubergine Rice


We all crave for some exotic Mexican cuisine to relish at the comfort of home.Those amazing Mexican flavors and that aroma of fresh herbs is always so inviting.

And,not the forget the hyped price menu of Mexican dishes at those luxury restaurants.

Also,what stops us to cook Mexican food at home is the mess of stocking all the exotic veggies and chopping too many ingredients,isn't it?

Not always, I have got this easy-peasy Mexican Rice recipe that would definitely tickle your taste buds with exotic Mexican flavors.

The Mexican Beans & Aubergine Rice

Here's the recipe to it... 


Ingredients-

1 glass of long-grain rice ( half boiled )
2 medium size tomatoes (de-seeded) chopped in small cubes
1 big onion chopped in small cubes
1 capsicum chopped in cubes
2 small aubergine chopped in small circels
1 tsp minced garlic
1 small cup of boiled rajma / kidney beans
1 tsp black pepper powder
1 tsp oregano ( u can use any herbs available)
Salt as per taste
1 tsp olive oil
Chopped parsley or coriander for garnish


Method-

✔ In a pan add the olive oil , when it heats, add the veggies saute them and add pepper powder , salt , minced garlic and herbs, give it a toss and mix well .

✔️Add the beans to it and mix well , let it cook on a low flame for about 3-5 minutes.


✔ Now, strain the half-cooked rice and add it to the veggies ,beans and spices in the pan. Toss it and mix well. 

✔️Mix well and cover the pan with a lid,and let the rice get completely cooked, and seperates ,it will take 8-10 minutes more. ( the rice grains should not stick to each other) 

✔️Garnish with freshly chopped coriander or parsley and serve hot!
